The chile relleno burrito here is about as close to perfect as Taos gets. Chile relleno folded into a burrito is a combination that has no business working this well, but Toribios pulls it off clean: rich without going heavy, deeply savory, and finished with a green chile that's the real reason to come back for seconds. It's the kind of dish you order once and then just keep ordering.

What makes it better is how consistent it is. Quick, reliable, and exactly as good the second and third time as the first, which is not something every fast New Mexican counter can claim. The wider menu (pastor tacos, tortas, barbacoa, tamales, carnitas, beef adovada) reads like a full tour of northern New Mexican staples, and on the strength of that burrito alone, it's easy to trust the rest of it.
