Fresh salmon fillets slathered with Dijon mustard, then covered with a fresh horseradish and bread crumb mixture turns this ordinary fish into an elegant entrée. It may easily be one of the best salmon dishes you'll ever taste!
We are now going to prepare a Horseradish Encrusted Salmon - so simple to make. What we are going to do, we're going to take it a nice piece of salmon that we are having right here. We are going to quarter it with Dijon mustard and we are going to make nice crust with a country bread.
What I did is, that round country bread you find at grocery store, cut it in half, get the crust off. That's what I am going to make, what is called a fresh breadcrumb.
So I am going to take little bit of the bread and put it right in here. I only have two pieces so I don't need the whole thing, but you know what I normally do. I make the whole bread and I make the crust and I kept the crust in the freezer and it lasts forever in the freezer.
We're gonna put about a little bit dill, you can put some cilantro in there, you can put some basil in there, you can put some sundried tomato in there, you don't need the sunrise tomato but why not, I like it. And then we're going to put some freshly chopped horseradish. You probably don't know what it looks like. Nobody could see it too often but, this is what fresh horseradish look like and it smells very much like horseradish, it's a good thing.
