Today I am going to make a mutton preparation using chironji or some people call it chiroli.
We are going to make very delicate rich dish of mutton but you have to learn some simple techniques when you cook this mutton. For this mutton preparation we are going to use 2 method preparation.
The first process we are going to do in a pressure cooker and then we are going to finish it in non-stick pan. And make it slightly dry. So first what we are going to do is use some dry spices cinnamon sticks, cloves, cardamom, one teaspoon of cumin seeds, just one teaspoon of coriander powder also and today i am going to use chironji.
Chironji is also known as chiroli. These are used in lot of sweets and even in a lot of korma preparation. That is shahi kind of varieties. Instead of almonds you can use this. This gives a better sauce consistency and also flavor to your dish.
